During the second century A.D., a legendary breed of cattle called Wagyu were brought from their home on the Asian mainland to a new life in Japan.  Through centuries of intense breeding the cattle flourished in a region of Japan called Kobe.  These cattle, the Wagyu breed, became famous for their superior flavor and supreme tenderness.

This ancient breed is the foundation for the superior quality of genetics raised at Clear Creek Farms in Hillsboro, Ohio.  Clear Creek Farms has played an intricate part in bringing this superior breed to the U.S. Midwest.  Our interest has been in the genetics area of the breed.  We are constantly working to increase the genetics superiority of the breed in the Midwest and to offer these genetics to interested breeders who want to increase the quality and consistency of their herd.

It has been shown that a cross Wagyu (F1, F2, F3) can produce 75%  high prime and 25% high choice beef on a consistent basis.

Fat has received a bad reputation.  The consumer is now obsessed with lean red (tasteless) and tough meat. The University of Wisconsin research has shown that some fats found in meat contain anti-cancer properties and also combat arteriosclerosis
(Hardening of the arteries).  Research has also shown that Wagyu cattle contain up to 30% more monounsaturated (the good kind) fatty acids than the praised Angus cattle.

The latest research from Pennsylvania State University, published in 2000 in the American Journal of Clinical Nutrition, showed that eating monounsaturated fatty acids is better for your heart than eating a special diet of lean products.  This research also showed that Wagyu meat can actually help reduce cholesterol levels.

Wagyu beef is visually striking because of its high marbling, which results in a taste and tenderness very few have experienced.  The rich quality of Wagyu beef gives it that old-fashioned meaty taste when prepared, while still being suitable as a part of a well balanced, low cholesterol diet.
